About the role
Your duties and responsibilities will include but not be limited to the following:
• Provide a high level of support to the Restaurant Manager to induct, train, lead and motivate personnel
• Manage the front of house shift operations, ensuring compliance with procedures, company culture and optimum management not achieve a high customer satisfaction
• Ensure the presentation, operation and security of all departments of the restaurant
• Assist in the development of operational procedures and manuals to drive consistent performance
• Provide friendly and attentive service to guests and responding to customer complaints and feedback appropriately
• Deliver shift operations in line with approved roster, budgets and timesheets
• Assist with administrative duties as directed by Restaurant Manager

About You
• Minimum 2 years Food & Beverage experience in a full service a la carte establishment
• Previous experience in a supervisory role is preferred
• Wine and cocktail knowledge with the ability to confidently provide appropriate pairing to customers
• Self-motivated with a positive outlook and ability to foster a strong and collaborative team culture
• Hold a current Approved Managers Licence
• Hold a current ‘C’ Class Driver’s Licence
• Be confident in the use of MS Office Suite and POS Systems
• Have flexibility to work across a weekly roster, that including nights and weekends

About the role
Your duties and responsibilities will include but not be limited to the following:
• Responsible for assisting with inquiries, including verbal, telephonic and electronic
• Administrate all reservations, including cancellations and modifications.
• Greeting guests and welcoming visitors, assisting guest check-ins and check-outs
• Guest services i.e. aAdvice on local tours, general information to guests, problem solving, managing complaints and feedback
• Inventory management/ allocation of rooms to meet the needs of a diverse range of guests.
• Lost property – contact guest and arrange return
• Assisting with airport transfers for guests
• Responsible for the opening and closing duties of the reception desk
• General Reception cleaning
• Administrative tasks, including filing, data entry and reporting

About You
• Ability to be flexible with work hours and shifts. Some weekend work will be required
• Minimum 1 year work experience as a Hotel Receptionist or equivalent.

About the role
Key duties and responsibilities include:
Collaborate with the General Manager on the development of the business strategy.
Develop and execute strategies to drive revenue growth and increase profitability.
Prepare budgets and regular reporting.
Work closely with the Head Chef to prepare menu concepts that align with the business strategy.
Oversee and participate in the recruitment, training and management of all restaurant employees.
Ability to work in a fast-paced environment and handle multiple tasks simultaneously.
Assist in the development of operational procedures to ensure consistent levels of customer service.
Ensure the restaurant complies with all Safety, HR and other regulatory requirements.

The Sous Chef will report directly to the Head Chef and will ensure the highest standards of customer food experiences, compliance with company and regulatory requirements, and financial profitability.

Your duties and responsibilities will include but not be limited to the following:


• Prepare menu items and special requests to meet dietary requirements.
• Manage shift kitchen operations in compliance with standard operating procedures ensuring all food is prepared to a high standard with a strong focus on safety, quality and presentation.
• Support the Head Chef with the development of menus, recipes sourcing of produce, and stock control.
• Contribute to the development and maintenance of a Standard Operating Procedures (SOP) manual, and other operational management plans as requested.
• Adhere to relevant legislative requirements, policies and procedures and actively participate in all meetings and learning and development opportunities.
• Deliver shift operations in line with approved rosters and budgets.
• Provide a high level of support to the Head Chef to induct, train, lead and motivate kitchen personnel.
• Lead kitchen operations to cover Head Chef leave periods or absence.
• Other duties as requested by management in keeping with the position of Sous Chef.


About You

• Certificate IV Commercial Cookery trade qualification or equivalent relevant experience.
• Minimum 2 years Previous Sous Chef or Senior CDP experience in a full service a la carte establishment.
• A genuine flair for creative modern Australian cuisine.
• Self-motivated with a positive outlook and ability to foster a strong, collaborative team culture.
• Safety first mindset with a strong working knowledge of the Food Safety Act, and awareness of Safety Management Systems.
• Adaptable to change and ability to meet the dynamic needs of a full service kitchen operation.
• A high level of understanding of safety work and food hygiene practices.
• Own transport, and current “C” Class Driver’s Licence.

• Manage kitchen function ensuring compliance with Standard Operating Procedures, company culture, and optimum kitchen management to achieve higher customer satisfaction and net revenue.
• Working with the Restaurant Manager develop enticing a la carte menus that incorporate local, fresh, seasonal and native Australian produce, that caters to a range of dietary requirements and preferences.
• Contribute to the development and maintenance of a Standard Operating Procedures (SOP) manual, and other operational management plans as requested.
• Foster positive relationships and collaborate with group colleagues and management to meet business needs and achieve best practice outcomes.
• Ensure compliance with relevant legislative and company requirements.
• Deliver kitchen operations in-line with budget with a goal of meeting or exceeding targets.
• Approve relevant invoices and respond to queries in relation to kitchen financial operations.
• Induct, train, lead and motivate kitchen personnel. Prepare kitchen rosters in accordance with Hospitality Award, approve timesheets and leave ensuring adequate coverage.


About You

• Commercial cookery trade qualifications, and/ or a minimum of 4 years Head Chef or Senior Sous Chef experience in a full service, high volume a la carte establishment.
• Experience with menu development and cost analysis.
• A sound understanding of the Award requirements around rostering, meal breaks.
• Self-motivated with a positive outlook and ability to foster a strong, collaborative team culture.
• Safety first mindset with a strong working knowledge of the Food Safety Act, and awareness of Safety Management Systems.
• Experience in delivering training and leading a team to excel.
• Own transport and current “C” Class Driver’s Licence.
