• Participate with the District Manager and Deputy District Managers in the formulation of operational policies, procedures and programs including long-range goals and priorities for program activities within the assigned area.
• On an ongoing basis, determine the adequacy and accessibility of resources and information to enable subordinates to function together as part of a cohesive food safety team.
• Adjust work activities and schedules based on changing priorities.
• Oversee and coordinate review, implementation, and ongoing assessment of inspection and enforcement activities at meat, poultry, and egg products establishments in a defined geographic area.
• Identify public health or food safety issues, and direct activities of front line personnel to conduct inquiries or assessments, document findings, and take or recommend appropriate action.
• Supervise and coordinate the work activities of individuals or cross-functional teams of FSIS Food Inspectors, Consumer Safety Inspectors, Veterinary Medical Officers, and Consumer Safety Officers in an assigned area.
• Manage the workforce, conduct performance reviews, develop and mentor your team members, and address employee and labor relations issues.
• Provide leadership to employees relative to long and short-term tasks, duties and responsibilities.
• Utilize Agency information systems, reports, and analytical tools to oversee plant's compliance with HACCP and other regulatory requirements, and to ensure that inspection resources are appropriately focused on food safety priorities.
• Ensure proper implementation and maintenance of Agency sampling initiatives within your assigned area of responsibility.
• You will also review and render decisions on plant management appeals of in-plant level decisions and actions.

Performs a full range of simple cooking tasks by preparing and cooking items requiring little, or no processing all forms of hot cereals; broils meats; prepares and cooks concentrated or dehydrated soups, sauces, and gravies; and makes cold sandwich fillings.  Prepares convenience items. Prepares foods by peeling, chopping, grinding, paring, cutting, slicing, dicing, pureeing, dredging, flouring, and breading.  Weighs, measures, and dispenses foods in accordance with portion controls.  Mixes ingredients according to precisely written recipes.  Sets up and replenishes all food items as needed.  Covers, dates, and stores leftovers according to established procedures.  Cleans and maintains equipment and work areas.  Maintains accurate food inventories and rotates stock items to prevent spoilage. Serves food in standard portions by placing uniform amounts in small dishes or glasses in prescribed quantities. Maintains water and detergent levels in dishwasher; removes strainer pans, inspection doors, etc., for proper cleaning of dishwasher, inside and out; removes calcium deposits as required; and restores room to orderliness. May unload food from delivery trucks and move heavy garbage cans.

Independently prepares all types of meats, poultry, seafood, vegetables, fruits, sauces, and gravies for menus.

Prepares, cooks, seasons, and portions food for all meals following standardized recipes at different levels of difficulty, makes modifications to recipes for ingredient quantities, number of servings, and size of the equipment available.

Plans, regulates, and schedules cooking procedures so numerous completed food products are ready at the same time.

Prepares and presents food in a visually appealing manner.

Prepares menu items using special or difficult recipes requiring numerous interrelated steps, many ingredients, and lengthy preparation time.

Prepares a variety of menu items using several different and complex methods of preparation.

Tests and evaluates new food products.

May coordinate the work of lower graded employees engaged in a variety of standard cooking operations.

Performs other related duties as assigned.

The incumbent performs tasks with several steps or a sequence of tasks that requires attention to work operations. The incumbent follows set procedures in accomplishing repetitive assignments and follows an established sequence of work. Performs any combination of the following:

• Set up buffet/food lines, steam tables, dinning room tables, and side service stands with hot and cold food items including meats, vegetables, salads, desserts, bread, butter and beverages.
• May serve food by placing portions of food on customer's plates. Brews coffee according to the number of servings required. Assemble and toss fresh fruit or green salads in quantity using prepared dressings and portion into standard serving sizes. Portions other food items (e.g., gelatins, juices and desserts) into standard serving sizes using the proper utensils and containers. Makes sandwiches using prepared ingredients.
• Break down and cleaning assigned area when the meal is finished and return food to the main kitchen.
• Sets up and operates a mechanical dishwasher, including the continuous conveyor belt-feeding dishwasher. Removes inspection doors, strainer pans, screens and spray arms for preventive maintenance and cleaning.
• Scrapes, soaks, scour and scrubs the heavier cooking utensils such as mixing bowls and pots, which because of their large size and weight are awkward to handle.
• Performs heavy-duty cleaning tasks in food service areas, such as cleaning ceilings and transoms; exhaust hoods; spaces under and behind kitchen equipment, including moving the equipment; washing floors and walls with powered cleaning equipment; cleaning walk-in refrigerators and freezers; and sanitizing garbage rooms.
• May unload food from delivery trucks. Move heavy garbage cans when collecting and transferring trash from the work area to the disposal area.
• Assist in taking inventory at required intervals.
• Adhere to all safety and sanitation requirements.
• Performs other related duties.

• Operates a variety of kitchen equipment using gas, electricity, steam or microwave heat sources. Disassembles, cleans and assembles component parts and accessories, following safety procedures to avoid personal injury and damage to the equipment.
• Uses and cleans a variety of cooking utensils to measure, weigh, and process food items. Cleans, stores, and maintains all equipment and work areas after each use.
