Primary responsibility is to provide supervision and instruction to 25-30 inmate workers who are assigned the duties of cooks, butchers, bakers, dining and dish workers, vegetable preparation workers, and pot and pan washers.

Provides continual training to the inmate workers in order to update their knowledge in all phases of production, presentation, and sanitation of food items. Oversees the receiving, storing, and issue of all food and non-food items.

Responsible for security operations such as key control, yeast control, knife and blade control, inmate accountability and conducts routine contraband searches throughout the work area.

Along with all other correctional institution employees, incumbent is charged with responsibility for maintaining security of the institution. The staff correctional responsibilities precede all others required by this position and are performed on a regular and recurring basis.

The Role:

Preparation of food items for service in a high volume restaurant

The Venue:

This iconic House of Blues venue is located on the famous Las Vegas Strip inside the Mandalay Bay Resort and Casino. This venue has a full-service restaurant, music hall, and nightclub. It is a go-to spot for unparalleled views of the strip.

What you'll do:

• Work with Chef to schedule shifts for kitchen staff
• Ensure that there is no unapproved overtime on shift
• Maintain daily labor sheet
• Assist in making decisions for staff and reaching resolutions of staff issues and problems
• Motivate kitchen staff for better performance and guest service
• Create harmonious working atmosphere for staff
• Monitor staff compliance with all HOB rules and policies
• Assist in performance of all job functions required of staff, including the lifting/moving of up to 50 lbs.
• Ensure that kitchen staff maintains clean kitchen area throughout shift
• Maintain Shift Checklist, Daily Cleaning List and Master Cleaning List

• Oversee food production to ensure quality and consistency with HOB standards

• Communicate information and coordinate between kitchen and other departments
• Maintain cooperative relationship with other departments

The Role:

Preparation of food items for service in a high-volume restaurant

The Venue:

This iconic House of Blues venue is located on the famous Las Vegas Strip inside the Mandalay Bay Resort and Casino. This venue has a full-service restaurant, music hall, and nightclub. It is a go-to spot for unparalled views of the strip

What you’ll do:

·         Prepare food items according to standard recipes

·         Ensure portions are correct size and weight

·         Follow all recipe specifications

·         Ensure proper rotation of all food items, including the lifting/moving of all food bens weighting up to 150lbs.

·         Keep all work areas clean and spill free

·         Ensure floor is cleaned, mop spills and remove any food, trash, or other obstacles from floor

·         Inspect food for spoilage

·         Proper rotation of food items

·         Maintain equipment in prep area of kitchen

·         Maintain line of sight/atmosphere control by circulating through your work area during shift

·         Follow House of Blues safety and sanitation standards

·         Assist other employees as needed

·         Follow closing procedures and check out with manager on duty

What you’ll need:

·         Knowledge of high volume kitchen operations

·         Large batch cooking

·         Kitchen sanitation knowledge

·         Able to consistently follow recipe standards

·         Skills in using a knife and heavy duty kitchen equipment

·         Coordinate food preparation with other kitchen staff

·         Maintain line of sight/atmosphere control by circulating through work area throughout shift

·         Follow standard recipes regarding presentation of food items

·         Prepare plate presentation pursuant to standard recipes

·         Clean and maintain kitchen equipment and walk-in cooler

·         Ensure that kitchen area, including grill, oven, stoves, etc. remain clean and free of hazards during shift

·         Keep floor clean and free of food items, trash, or other obstacles

·         Maintain House of Blues safety and sanitation standards

·         Prepare kitchen equipment and set up station for shift

·         Ensure proper rotation of all food items, including the lifting/moving of food bins weighing up to 150 lbs.

·         Perform all opening and closing duties

·         Sanitation and Safety compliance
