In your capacity as Sodexo's Cook Manager at Brewood C of E Middle School, Brewood, you will be in charge of managing the finances and food and beverage operations for your school's kitchen. It will be your duty to make sure that the food and service meet the highest standards and that the school catering is among the best in the area. What you do:

• Manage the replenishment of food and the dismantling of work areas at the end of service.
• Develop, mentor, conduct training, and inspire the kitchen team.
• Control the complete catering operation, including labour, food, and stock expenses.
• Manage and optimise all costs that are under your control.
• Ensure uniformity in the food and service standards provided to fellow staff members, visitors and students.
• Manage the creation and development of menus.
• Conduct routine audits to ensure standards are being followed.

What you bring:

• Must have expertise on cooking on a large scale, anywhere between 100 – 1300 students.
• Have experience following recipes, possibly in a similar setting.
• Have previous staff supervision experience or line management experience.
• Have experience working with fresh produce and ingredients.
• Be aware of the importance of adhering to health and safety procedures.
• Ability to work under pressure and to tight deadlines in a busy Kitchen environment.
• Be professional, leading by example and having a positive outlook is key.
• Hold basic food handling skills certification:
  • NVQ Level 2
  • Level 2 Food safety Certificate
  • A minimum of 1 years of experience in hands on cooking, training on Food Hygiene, and Health & Safety will be given.

Accountabilities and Responsibilities but not limited to:

• Prepare food items ensuring all recipes and portion sizes are adhered to
• Prepare food with the assistance of colleagues to be ready for all service times whilst ensuring that there is a regular replenishment strategy for the whole service period.
• Prepare for business special events and fundraising activities relating to the catering operation.
• Complete all food costing as required by the chef manager ensuring that the correct ingredients prices are used and review these on an agreed basis
• Complete all wastage control sheets for the food prepared
• Count all stock for the designated responsibility area as requested by the manager
• Put forward suggestions to the manager for changes to the menu based on experience ingredient prices and best sellers
• Assist the chef manager with the completion of budget KPIs and cash checks for the catering department
• Ensure that all food displayed is suitably garnished and that serving staff are aware of the relevant portion size for each menu item
• Ensure that serving staff are aware of all ingredients for each dish on display to be able to respond to food allergy queries
• Assist with the training, coaching and development of new and existing employees as requested
• Fully support the catering team, manager & company including being flexible in the type of duties undertaken
• Prepare food in line with current Food Hygiene and Health & Safety Procedures
• Ensure all food is prepared and served and labelled/dated correctly

What you'll be doing...

As a Chef Manager you will proactively manage teams on site as well as be accountable for recruiting, inducting, training, and supporting colleagues to deliver an efficient, high-quality service to Elior UK, our customer and clients.

Responsibilities:

• Motivating and managing a team
• Controlling and managing a budget
• Accountable for ensuring ongoing team communications, including building internal and external relationships, management reporting and client liaison to enable operational excellence

Working Pattern: 5 days over 7 - 37.5 hours a week.

In your capacity as Sodexo's Cook Manager at Parkside Primary School, Stafford. ST10 1TH, you will be in charge of managing the finances and food and beverage operations for your school's kitchen. It will be your duty to make sure that the food and service meet the highest standards and that the school catering is among the best in the area. Your attitude will affect the way your team functions on a daily basis as the person they look to for guidance and encouragement, which will promote a positive and effective work atmosphere. What you do:

• Manage the replenishment of food and the dismantling of work areas at the end of service.
• Develop, mentor, conduct training, and inspire the kitchen team.
• Control the complete catering operation, including labour, food, and stock expenses.
• Manage and optimise all costs that are under your control.
• Ensure uniformity in the food and service standards provided to fellow staff members, visitors and students.
• Manage the creation and development of menus.
• Conduct routine audits to ensure standards are being followed.

What you bring:

• Must have expertise on cooking on a large scale, anywhere between 100 – 1300 students.
• Have experience following recipes, possibly in a similar setting.
• Have previous staff supervision experience or line management experience.
• Have experience working with fresh produce and ingredients.
• Be aware of the importance of adhering to health and safety procedures.
• Ability to work under pressure and to tight deadlines in a busy Kitchen environment.
• Be professional, leading by example and having a positive outlook is key.
• Hold basic food handling skills certification:
  • NVQ Level 2
  • Level 2 Food safety Certificate
  • A minimum of 1 years of experience in hands on cooking, training on Food Hygiene, and Health & Safety will be given.
