Reporting to the Executive, the Senior Sous Chef will be responsible for;

• Ensuring the smooth running of kitchen operation at all times
• Management of sound stock control & procedures
• Managing communication within the kitchen and with other departments.
• Assist the Executive/Head Chef in menu writing, planning and be proactive in assessing current industry trends and initiatives for your section
• Ensuring the standard of food and service are executed to the highest level at all times

• Assisting the Course Manager in undertaking their responsibilities
• Monitoring the condition of the turf and gardens checking for diseases, insects, weeds and other imperfections.
• Recognising the correct mower settings, mower patterns and be able to make adjustments of the cutting height and quality
• Being fully contactable at all times via the department radio
• Ensuring that the fuel supply is maintained at the appropriate levels.
• In the absence of the Course Manager undertaking additional responsibilities; organising and delegating daily tasks as well as weekly and monthly work programmes
• Liaising with the maintenance on all breakdowns and machinery matters
• Ensuring that all pesticides and fertiliser records are updated daily
• Completing tasks to the standard required, training other members of the team to perform to these standards
• Maintaining the course to the standard required by a 5* establishment, ensuring guest areas are well presented.

• At least 3/5 years practical experience
• Qualified to NVQ level 3
• Chainsaw Certificate

• Ensure that expectations are exceeded at all times in all areas of C&B
• Support the operational teams in delivering exceptional standards
• Leading from the front by running and overseeing events. Remaining hands on within this busy food and beverage operation.
• Ensure that all C&B department standards remain consistent
• Build a strong relationship with every client. Ensure that every meeting or event organiser is met on arrival and receives a warm welcome and thorough briefing to check every detail and establish other requirements.
• Ensure every meeting receives a de-brief to check satisfaction and thank them for using the hotel. Any future sales leads should be passed to Sales Team.
• Assisting the F&B Manager in the recruitment and development of team members.
• Support the training of the team to enable them to deliver a consistently high level of service.
• Ensure functions room set up is per function sheet and that our standards are maintained.
• Optimise opportunities to hit and exceed budgeted targets

Our successful Assistant C&B Manager will have;

• Minimum of 2 years supervisory/management experience in a similar 4 to 5 star standard hotel within a conference and banqueting department
• Flexibility to work different shift patterns
• Customer Service experience and commitment to delivering this to a high standard

• Well presented
• Good time keeping and ability to multi-task
• Excellent verbal and written communication skills
• Ability to work under pressure

We are actively seeking a Chef here at The Manor House Golf Club in Castle Combe.

Working as part of a team, your main duties will be assist the Sous Chef and Head Chef in the preparation and service of food for our busy Golf Club, ensuring that high standards of efficiency are maintained and that the designated kitchen areas, equipment and utensils are always kept clean and tidy.

• Assisting the team in the smooth, safe and efficient running of the kitchen operation.
• Preparing and cooking of breakfasts, snacks & lunches and being part of the team making food for special events (eg. Golf Days and meetings) .

• Continually striving towards achievement and improvement.
• Ensuring the Sous Chef and Head Chef is made aware of any relevant feedback from either club members, guests or staff.
• Assisting others in the team when required.
