AKA Manchester Ltd is a Japanese restaurant serving bento box, Udon noodle dishes, sushi rolls, nigiri, sashimi, and maki. Our mission is to deliver an unparalleled experience that revolves around the principles of freshness, authenticity, and the tireless pursuit of culinary excellence.
Main responsibilities:
•Arrive for duty in accordance with the departmental rota and correctly dressed, •Discuss the daily business requirements with the head chef and second chef, including any special requests for special dishes and help to allocate tasks accordingly.
•Ensure that all the required equipment, supplies and resources are to hand and in good working order, report any problem to the head chef and second chef.
•Prepare raw material for stir-fry and noodles and ensure that the freshness, quality and presentation of the dishes are at high standard and do not fall below the expected standard.
•Be responsible for maintaining the highest standards of food hygiene and personal hygiene as well in sushi section in accordance with the legal and company requirements and to report any incident to head chef without delay.
•Prepare requests for supplies prior to running out of food materials and to ensure that those requests are passed to the second chef and to ensure that deliveries are received and stored appropriately.
•Be responsible for the supervision and training of all junior kitchen staff allocated.
•Attend any meeting and training sessions as requested by the senior management.
•Work with the head chef and second chefs in the kitchen to develop new stir-fry dishes and record receipts.
•Carry out any reasonable request made by the head chef or a member of senior management.
•Be fully conversant with all company procedures as outlined in the staff handbook, and conditions of employment
•Be fully conversant with all legislation affecting working procedures and practices within the kitchen and in the company.
•Be fully conversant with the operating standards and procedures within the department.
About you:
•Prior experience in a similar role.
•Broad knowledge of stir-fried dishes.
•Strong knowledge of cooking methods, kitchen equipment, and best practices.
•Good knowledge of special dietary requirements and allergies.
•Stamina for working and leading on a long shift.
•The ability to work under pressure.
•Team player with excellent interpersonal skills and the ability to collaborate effectively with teams.
