The role

Our Head Chef is responsible for delivering an efficient, effective and profitable kitchen service that complies with all Health & Food Safety requirements. You will lead, develop and motivate your team of Line Chefs, to create a positive work culture and ensure all brand and company objectives are met. The role reports directly to the Hotel Manager and is part of a team based from our attractive hotel in Manchester, M1.

Head Chef responsibilities will include:

• Leading the kitchen function at the hotel

Our Sous Chef is responsible for producing all menu items in an efficient and consistent manner. This role reports directly to the Head Chef and is part of a team based from our attractive hotel in Manchester.

Sous Chef duties include:

• Assisting the Head Chef with responsibility for the Kitchens daily operations

What will you be doing?

• Develop an in-depth understanding of your hotels' local markets based on intelligence and knowledge of competitor activity and rates, resulting in increased revenue generation through focused sales activities for Local and National Accounts.

What we need from you
To succeed in this role, you’ll need to be a proactive self-starter who is able to proactively drive business, maintain or grow market share from existing accounts and delivery of any potential new business. There will be a significant reliance on the individual to understand and analyse market data to identify opportunities for new business wins. In addition, the role requires:

• Effective selling skills.
• Excellent relationship-building skills.

A day in the life of…

As Hotel Reservations & Sales Executive, your role will be to convert bookings and generate leads resulting in revenue growth within the business and support the delivery of the commercial strategy.

You will also be responsible for:

• Ensuring all details on contracts & pro - forma's are completed
• Successfully convert reservation enquiries from individuals and groups into materialised bookings.
• Manage multiple properties & prioritising work load
• Liaising with the on property team to ensure guests requirements are met
• Identifying any new leads and contacts, working with the Sales teams in driving engagement for lead generation
• Responding to sales opportunities to drive revenue growth. Performing general office duties and administrative tasks where needed.
• Preparing weekly monthly reports as required.

Based in the Central Reservations Office (Located within the Mercure Manchester Piccadilly Hotel), you will be part of a team of passionate people who know that being the best doesn’t always mean working around the clock.

What do we need from you?

To be successful in his role you will have previous experience working in a Sales/reservations team, preferably in the hospitality industry. An excellent telephone manner and strong IT skills are paramount to ensure success within this role. You will be committed to delivering an exceptional customer experience and be able to respond and thrive within a fast-paced environment.

The role

Our Sous Chef is responsible for producing all menu items in an efficient and consistent manner. This role reports directly to the Head Chef and is part of a team based from our attractive hotel in Manchester.

Sous Chef duties include:

• Assisting the Head Chef with responsibility for the Kitchens daily operations
• In the Head Chefs absence you will be responsible for the following:
• Responsible for ordering stock and dealing with suppliers
• Monitor and control stock levels
• Unloading and putting away deliveries
• Implementing control measures and training staff about COSHH and Manual Handling
• Ensure the cleaning schedules are followed and a high level of cleanliness throughout all kitchen is
  maintained at all times
• Liaise with the sales team for information regarding the following business weeks bookings
• Cooking food items by grilling, frying, sautéing, and other cooking methods to specified recipes and standards.
• Facilitating special requests from guests if received.
• Managing wastage through correct product measurement.
• Ensuring you are working towards all kitchen SOPs at all times.
• Setting up and stocking food items and other necessary supplies.

What you’ll bring to the team

An ideal candidate will have an excellent understanding of cooking methods, ingredients, equipment and procedures. Demonstrable cooking experience including experience as a Sous Chef or Senior Chef De Partie. Familiarity with industry best practices and Basic Food Safety are essential.
