About the role

This role supports the Restaurant Manager in the development and delivery of excellent front of house service at Rochdale Town Hall’s new in-house restaurant, The Martlet Kitchen. The postholder will be tasked with delivering a coherent operation, which attracts new and returning customers, whilst always ensuring the service supports the wider strategic vision of the town hall. The postholder will use customer feedback to contribute to the development of menus and ensure that the needs of our customers are reflected in the restaurant offer.

About you

We are looking for an Assistant Restaurant Manager of excellence and experience to join the Town Hall’s growing restaurant team.

You will be a good team player, be able to work under pressure and have the ability to manage staff as part of the day to day operations of The Martlet Kitchen.

Rochdale Town Hall re-opened to the public in March 2024 and since that time has welcomed over 60,000 visitors from all over the world.

We are looking for a passionate, experienced Assistant Restaurant Manager to join our busy restaurant team.

As an Assistant Restaurant Manager, you will contribute to the commercial success of Rochdale Town Hall through the building of an operational model which consistently delivers high-quality catering for up to 150 diners per day, exceeding their expectations and creating lasting memories.

You will also support the Restaurant Manager and Executive Chef to deliver a programme of training for all front-of-house staff to ensure first class customer service is delivered to all our guests.

What you'll bring

You are probably an existing Head Chef, Kitchen Manager or Sous Chef looking for your first step into a Head Chef role.
You will have experience of working with fresh ingredients and be able to demonstrate good chef/kitchen skills (food prep hot and cold, cleaning, knife skills, good hygiene practices)
Your work ethic is rolling your sleeves up and getting stuck in and leading from the front; playing an active role in delivering excellent kitchen and food standards as part of a high performing team.

• Assistant Transportation Manager

  Location: Aberdeen, Maryland

  Gordon Food Service delivers daily to restaurants, healthcare operations, and schools so our customers depend on us- and we depend on our transportation team for excellence! Join our team as an Assistant Transportation Manager and help ensure the efficient and economical delivery of Gordon Food Service products

   

  As an Assistant Transportation Manager, no two days are the same, but typically you'll be involved in the following: 

  • Leadership - driver meetings, mentoring, motivating, ride-along/coaching trips, and training

  • Team Management -  participation in interviewing, hiring, training, performance assessments, and recognition

  • Operational Management - route balancing, dispatch, equipment assignments, backhaul scheduling

  • Regulatory Oversight - DOT, Federal, State, and Local regulations

  • Route Coverage - during vacations and absences 

  Schedule:

  Thursday through Sunday, start at 6 am Thurs and Fri

  Sat and Sun start time dependent on business needs

  OR Monday to Friday 10 am start

  • At least 21 years of age 

  • High school diploma or GED equivalent 

  • Class A Commercial Drivers License

  • CDL-T certification preferred

Our client is a world renowned Luxury Hotel operator. They are currently looking to recruit an Head Chef for their leading operation based in Aberdeenshire.

Role Job Description

Head Chef is responsible for leading the culinary team on the delivery of 5-star dining and food services within the Hotel and Clubhouse. This is a hands-on cooking and management role. High-quality informal brasserie-style dining at the clubhouse is central to the golf experience. Quality grab-and-go options before and during play, along with fast, hearty, quality breakfast menus form an important part of the clubhouse offering.

More refined dining at the Hotel including breakfasts, in-room services, hampers and special menus for exclusive use require the development, preparation and delivery of classic formal dining. This is a vital management role that requires a high level of culinary ability and creativity, as well as organisational and leadership skills on the planning and execution of 5-star guest experiences at the Clubhouse and Hotel for golfers, members, residents, visitors and guests. The role operates on a shift-based system including evening and weekend working in line with the seasonal needs of the business.

Key Duties & Responsibilities:

- Oversee and manage the estate kitchens and day-to-day food services at the clubhouse and Hotel/Lodge

- Appoint, train and lead the culinary team, ensuring excellent communications with the operational and sales team

- Careful management of personnel and rotas to ensure costs are controlled and in line with the needs of the business

- Design and development of menus and dining experiences in agreement with senior management

- Oversee and manage food ordering, supplier agreements and cost controls in line with budget and business demand

- Monitor and appraise pricing and remain up-to-date on market activities and competitors

- Implement and maintain SOPs, portion control, plating and waste management records to maximise efficiencies and profitability

- Ensure correct stock control procedures are adhered to, including appropriate storage and labelling

- Work closely with the wider management team to develop the culinary opportunities and services on property

What we are looking for:

- Experience of leading a culinary team in a 4 or 5-star restaurant context

- Formal catering qualifications

- Culinary creativity, imagination and flair

- Passion for cooking and high level of presentation

We require an Regional Executive Chef who can look after our exclusive sites within this division. This is a unique opportunity for you to work across a dynamic and diverse division with some amazing, passionate teams.

What you'll be doing...

Responsibilities:

• To be responsible for the food standards and work with our Chefs and Unit managers to ensure the highest standard of quality and presentation is maintained, along with compliance of all food policies.
• Ensure that excellent levels of service are being delivered to the customers.
• Budget management and to be the custodian of the Regions Gross Profit performance
• To provide trouble shooting support to operational management as required and directed by the Senior Management
• Supporting the business with high level hospitality and events
• Supporting sales presentations and help promote the company's services.
• Work with the operations and unit team to mobilise new sites
• Work with the operations team to cover existing sites
• To develop and maintain positive relationships with all clients.
• Ensure all Food Hygiene and Health & Safety policies and allergen control procedures are followed.
• Compliance with all Company & Client policies, site rules and statutory regulations relating to Health & Safety, safe working practices, hygiene, cleanliness, fire and COSHH.
• Completing company bookwork
• To assist in providing accurate reports on unit-based activity and outcomes
• Training permanent and casual staff and assist on delivering training sessions
• Support in auditing/monitor the quality of the service
• Delivering promotional initiatives, contributing to business development

What can you bring?

In this role:

• Previous experience in a highly skilled food role, must have excellent cooking skills in both presentation and taste. Innovation and passion for great food
• Relevant catering qualification and formally trained Chef
• IT proficient.
• Extensive experience and strong financial understanding of finances and budgets
• Strong communicating skill and ability to adapting style to difference audience and levels
• Experience of working in a compliance environment
