What will I be doing?

As a Sales Manager for The Caledonian Edinburgh, you will be responsible for the Group MICE delivery focusing on key feeder markets within UK Domestic, European and International territories including US Incentive Travel. • Develop a strong sales and marketing plan on how you will penetrate your markets through calls, site inspections, familiarisation trips and entertainment.
• Continually audit our business mix to ensure we have the right business segments to deliver exceptional results.
• Ensure systems are in place to offer cross-sell opportunities to new & existing customers.
• Attend and participate in sales initiatives, customer appointments & tradeshows as required.
• Take responsibility for the activation of the hotel overall MICE sales strategy in conjunction with the Director of Sales.
• Manage the relationship between on property sales & above property i.e. Hilton Worldwide Sales / Area Sales Office / Klarent Sales Leaders.
• Please note that within this role there is often frequent travel required throughout the UK, Europe and International Markets.

What are we looking for?

• Experience in the MICE market and existing relationships with relevant agencies & corporate clients.

Working Hours:

As a Head Chef you will work circa 45 hours per week, including weekends & split shifts with a salary of £35,000 Per Annum.

Being a Head Chef:

As a Head Chef your responsibilities will be to look after all aspects of a Hotel Kitchen. We offer a set menu on a 7-day cycle system for our guests, who are predominately coach customers. The menu is repeated each week with the majority of starters, mains and sweets made in-house using fresh produce.

As the Head Chef, you will oversee the Kitchen team to deliver a consistent standard of food whilst controlling your cost per bed night spend. Essential Skills:


Experience in a similar role
Strong communication skills
Understanding of all aspects related to food safety regulations and kitchen record keeping
Ability to work under the pressure of a busy kitchen whilst maintaining attention to detail
A passion for delivering high quality consistent food
Understanding of cost control and utilising all produce


Desirable Skills:


Knowledge of the travel, tourism and hospitality industry
Attention to detail and passion for the industry
Experience working as a Senior or Head Chef in a similar setting would be an advantage

· Reporting malfunction of services, equipment and any repair requirements relating to wall surfaces, floors, light fittings or wall switches, to the Head Chef/ Chief steward. 

· Ensure your behaviour respects the perspective, privacy, safety and security of our guests, contractors and work colleagues at all times. 

· Communicate clearly between food service team and culinary colleagues – both ways. 

· Ensure all duties are discharged safely and that risk to self and others is minimised 

·  Execute all activity on cleaning schedule in a methodical and timely manner 

·  Maintain supply of clean food service materials and culinary equipment / cookware as required 

·  Ensure that all prescribed and designed process, systems and standards are maintained 

·  Maintain your work station cleanliness and tidiness constantly. 

·  Ensure you are ‘en place’ in sufficient time for service and that your station contributes consistently to a highly effective service session. 

·  Ensure you close down your section and complete end of shift procedures

· Ensure that all Food and Beverage bookings are managed and communicated across the Food and Beverage department in a timely manner

· In depth knowledge of the booking system used within the Food and Beverage department

· Ensure that all guests are called pre-arrival and any specific requirements are communicated with the teams

· Liaison with guests in the booking of private events within the Food and Beverage departments.

· Welcome guests in a polite and friendly manner, consistently demonstrating great customer service

· Up-sell with latest departmental incentives

· Carry out cleaning duties as assigned to you in any of the food and beverage outlets

· Adhere to all hotel brand standards

· As a Food and Beverage Host you will work 5 days per week, including, but not always, weekends and bank holidays
