The position has a sequence of steps that require attention to work operations, sanitation and safety; work assignments require advanced culinary knowledge and judgment. The work of this position is involved in the preparation of regular or special diet foods and meals. This includes cooking meats, poultry, fish, shellfish, and vegetables and making soups, gravies, sauces, desserts, and other foods. The work of
this position organizes and coordinates the work of lower grade cooks at one or more work centers in a production kitchen in order to accomplish a variety of quantity cooking operations.

Major duties include but not limited to:

• Set up tray lines, steam tables, dining room tables, and side service stands with hot and cold food items.
• Serve food cafeteria style by placing uniform portions of food on customers'/patients' plates.
• Break down and clean assigned area when the meal is finished and return food to the kitchen.
• Return soiled trays and dishes to the dish room after meals.
• Deliver meal trays to the patients' bedsides.

DUTIES:

• Provides food-operations-specific leadership, serving as professional and technical advisor to staff and other health care professionals.
• Has oversight over HR staffing, employee relations and labor relations in Food Service Operations.
• Exercises a full range of supervisory and personnel management authorities and responsibilities in planning, directing, and assessing work of subordinate staff.
• Establishes a training plan for the food operations section.
• Develops and leads food operations.
• Establishes strategic goals and ensures priorities align with the strategic plan of the NFS department, VISN and national programs.
• Leads the continuous quality improvement effort in Food Service Operations.
• Identifies and prioritizes, sets long and short term goals, develops action plans and analyses data to evaluate progress to improve outcomes.
• Develops and updates policies and procedures and establishes and oversees a system for regulatory compliance. Coordinates food service operation policies and procedures with clinical nutrition management, nursing and other services, as applicable.
• Manages the budget and other resources, anticipating future trends and inflation, new service opportunities, recommendations for growth, efficiencies and strategic efforts are factored in resource requests and brought to the Chief.
• Directs staff in management of contracts, subsistence, supply purchasing for NFS and submits reports to the NFS Chief.
• Solicits support and/or negotiates with facility managers to influence decisions to support food operations section success.
• Works closely with the Supervisory Dietitians to support the department, cover the work within NFS and execute the activities of the department.
• May perform other related duties as assigned which are appropriate for this grade and assignment.

- Set up assigned station with the correct supplies and food items
- Serve food cafeteria style by placing uniform portions of food on customers'/patients'/residents' plates
- Break down and clean the station when assigned
- Set up dining room tables for service, place food and beverages on tables, and replenish items as necessary
- Return soiled trays and dishes to the dish room
- Deliver meal trays to the patients' bedsides and report the patients' comments and complaints to the supervisor or dietitian
- Prepare beverages according to the number of servings required
- Prepare fresh fruit/cold salads/dressings/sandwich fillings and cold sandwiches and simple cold desserts in specified quantities
- Sort, wash, peel and cut cold foods using knives or other equipment
- Provide assistance to cooks in the food preparation area, such as weigh, measure and assemble ingredients according to standardized recipes
- Prepare uncooked food items, such as sandwich spread and salad dressings
- Operate and break down and clean all equipment assigned to food service and related areas
- Portion food items into standard serving sizes using the proper utensils and specified dishware
- Prepare boxed/to go meals
- Select and place correct items on patient trays
- Read and interpret a regular or modified menu, individual diet cards, tray tickets or patient selections
- Identify obvious discrepancies between the prescribed diets and the food items designated by the menu

- Perform heavy-duty cleaning tasks throughout the food service and related areas

Physical Requirements: Wage Grade 3 Food Service Workers perform work requiring light to moderate physical effort. They may be required to perform heavy work, such as scouring and scrubbing large size cooking utensils and pushing heavy carts and trucks in unloading, storing, and delivering supplies. They are subject to continuous standing and walking, and frequent stooping, reaching, pushing, pulling, and bending. May be required to work on ladders and use powered cleaning equipment. They frequently lift or move objects weighing up to 20 pounds unassisted and occasionally lift or move objects weighing more than 40 pounds with the assistance of others. The work is performed in kitchen areas where the steam and heat from cooking and dishwashing equipment often cause uncomfortably high temperatures and humidity. The work area is well-lighted but usually noisy from food service activities, and there is danger of slipping on floors where food or beverages have been dropped. Food service workers are regularly exposed to hot liquids, sharp cutting blades, hot working surfaces, and extreme temperature changes when entering walk-in refrigeration or freezing units.

• Responsible for surveillance of the installation food service contract and military food service operations.
• Determine contractor and/or military effectiveness and conformance to contractual and regulatory requirements.
• Review performance of contractor and/or military personnel and address any defects or failures in accordance with special conditions and technical specifications.
• Evaluate quality assurance program effectiveness by reviewing food service technical data.
• Evaluate dining facility operations to include purchase and receipt of rations, inventory control, food preparation, production, serving, sanitation, equipment usage, administration and management, to ensure an acceptable quality level is maintained.

This position assists in investigations to identify and resolve any issues that arise and supports the health and safety manager in these investigations. 

The compensation package for this position ranges from  $58,000 to $87,000 on an annual basis.

Duties and Responsibilities

• Responsible for the management of all day to day health and safety related functions

• Determine and describe causes and impacts of problems

• Participate in all GFS safety audits and implement GFS best practices

• Conduct on site orientations for all new hires and ensure all new hires are pre-qualified

• Ensure fire procedures are compliant with the provincial fire codes

Required Skills & Qualifications

• Prefer minimum 2 years previous experience in Health and Safety or combination of education, training and relevant work experience

• OFA Level 2 or OFA Level 3 first-aid certificate an asset

• Ability to communicate in both verbal and written form in a manner that is sensitive to the receivers needs and is easy to understand

• Self starter with good time management and documentation skills

• Must be dependable, with the ability to work effectively as part of a team or individually

• Willingness to learn, accept change and the ability to work in a fast paced environment

SUMMARY: This position is responsible for the daily management of all activities of the FSQA department to include food safety programs specification adherence and product quality for products within their assigned facility. In addition, the FSQA Manager will oversee all special projects as assigned, departmental budgets, turnover and safety. 

Essential Duties & Responsibilities Include:

• Daily oversight of production practices including raw material receiving requirements; pre-operational and operational sanitation; finished product quality and Food Safety Systems; ensuring all Tyson FSQA policies and procedures are followed
• Monitoring verification and documentation associated with adherence to government regulations
• Developing, implementing and maintaining the HACCP, PCQI, SOP, GMP and SSOP based programs
• Ensuring finished product conforms to customer product and label specifications
• Report product issues and audit results to plant and corporate FSQA, plant management, corporate sales and/or operations
• Interacting with customers and their agents for product showings, plant tours and audits; visits to customer facilities
• Initial product runs and investigation response to quality related customer complaints
• Monitoring microbiological results; conducting bacterial swabs and generating shelf-life environmental graphs
• Performing research and development activities

REQUIREMENTS:

Education: Bachelor’s degree or higher in food safety, animal science, natural science, or a related technical field, or equivalent job experience essential to the role.

Experience: 5+ years of industry experience, with 8+ years preferred. Experience with USDA regulated products is preferred, and SAP experience is a plus.

Computer Skills: Proficient in standard computer skills, including spreadsheet generation and template development for effective communication with plant management, corporate FSQA, sales, and operations.

Communication Skills: Exceptional written and verbal communication skills, demonstrating the ability to correspond effectively with team members at all levels, from the production line to corporate management.

Special Skills: Strong problem identification and problem-solving skills. Ability to work independently while effectively collaborating with various facets within the organization and serving as the plant liaison to USDA. HACCP Certified, GFSI Certified, and PCQI Certified are preferred.

Supervisory Skills: 2+ years of direct supervisory experience, with 5+ years preferred.

Travel: Occasional travel, approximately 2-5 trips per year.
