The job of the Pastry Chef is the production of the most creative pastries and deserts, for the enjoyment of our guests. You will also supervise, plan, organize, direct, and participate in the centralized production of highly specialized bakery and pastry menu items. The Pastry Chef will also take on the responsibility of organizing and leading training sessions for the members of their team.

The Highland Soap Visitor Centre & Larder Cafe has been a fantastic success since we opened it in December 2020. We have a large shop, which has recently doubled in size with room to double again. Our cafe has 110 covers and an outdoor events space - and all set in 6 acres of grounds with views over Ben Nevis in what is undoubtably the area’s best located tourist destination.

We are a friendly, locally-owned business with a good local reputation and a strong tourist trade. We make good quality food out of local ingredients and are increasingly becoming known nationally as a wonderful day out for a family. Opening hours are mostly 9am-5pm, 7 days though we have an ambition to do evenings in the summer. Operationally, the site is running smoothly with a strong team.

We are looking for someone experienced in running a busy restaurant or hotel and managing staff. Applicants should have experience in rota planning, interviewing potential new team members and operating within a budget. This role will report into our General Manager and will require working closely with our Head Chef.

• Support the annual budgeting process and financial forecast for the operations departments
• Ensure that all operations departments are maximizing revenue and profit potentials while minimizing costs and staying within budget guidelines
• Develop, recommend, implement and manage the operational department’s annual and long term goals
• Anticipate and address guest issues, establish proactive processes to promote guest satisfaction

•Develops a food and beverage operating strategy that is aligned with the brand’s business strategy and leads its execution.

•Supervises daily food and beverage shift operation and ensures compliance with all policies, standards and procedures.

•Supervises staffing levels to ensure that guest service, operational needs and financial objectives are met.

• Conduct departmental daily briefings to ensure that all pertinent information is well received by team members
• Supervise team members to ensure that all tasks assigned/required in the outlet are carried out on time and according to instruction and departmental standards
• Handle guests’ complaints and comments tactfully and efficiently
• Handle all administration work pertaining to cashier/bar operation requirement and company’s policies
• Check the supply of equipment/stock level and ensure that there is no shortage of items which have impact on the operation and guests
• Maintain complete knowledge of all food & beverage services, contents & preparation methods, outlets and hotel services/features
• Ensure that health, safety and security procedures are in place in the outlet

We have a full-time position available for a kitchen porter. Main duties include cleaning, washing up and basic food preparation.

End of season bonus and fortnightly share of tips.

• Produce high quality food in a specified area of the food preparation and ensure that this is also practiced amongst all team members
• Check the taste, temperature and visual appeal of food items prepared to ensure that the quality and portion are consistent and as per specifications set out
• Ensure that all equipment and perishable items are stored in its designated place and is done in the most hygienic manner

• Manage food cost controls to contribute to Food and Beverage revenue;

This position is responsible for the supervision of the work of a team of kitchen personnel, thereby maintaining high standards of food preparation and service in the kitchens.

As Sous Chef you will be completely responsible for directing, training, supervising, planning and coordinating all areas within the culinary department, including any projects requested by the Executive Chef. You should be comfortable in leading and managing the kitchen team, and will provide support and training on an ongoing basis. It will be your responsibility to ensure only the highest quality of food & beverage for our guests through meticulous consistency, taste and presentation of all dishes. Additionally you will monitor the food inventory on a monthly basis, maintaining proper control of orders and purchases and ensuring that all deliveries are received and handled efficiently and in line with hotel standards. You will review the food cost analysis on a daily basis to ensure that it is in line with the budget, with the goal of securing profit margins while maintaining the Corporate image of the Company at all times. You will also oversee the cleanliness and hygiene of all kitchen spaces and procedures.

As an Executive Sous Chef you will be second in command and report directly to the Executive Chef. As such you must be intimately familiar with all the activities involved in kitchen operations and be prepared to step in and cover all eventualities if called upon.

You will need to be able to prepare and cook a wide range of international dishes, including French, Italian, and fusion cooking. The Executive Sous Chef is also responsible for overseeing the kitchen team members, which will involve preparing, scheduling and delivering training, managing team member performance, ensuring that the kitchen safety standards are up to date and that team members are complying with health, safety and sanitation rules. Additionally, you will help with menu planning, inventory control, and supply management.

As a Chef de Partie you will be expected to work on all sections of the kitchen and will be required to help out as needed under the direction of the kitchen manager. You must have strong all round kitchen skills, be capable of organising your own prep and running your section during service with the skill set and flexibility to move about the kitchen as required.

The ideal candidate will be a self-motivated professional chef with a real passion for cooking, hardworking, self-aware and keen to learn. You will have previous experience in a similar, busy fresh food environment with appropriate professional qualifications and/or relevant industry experience.
