• YOU WILL/MAY:
• Ensure that regulated establishments produce a safe product by executing appropriate inspection methods, determining non-compliance with regulatory requirements, documenting noncompliance and initiating enforcement actions, where warranted.
• Verify that meat and poultry slaughter and/or processing establishment's Sanitation Standard Operating Procedures (SSOP) and Hazard Analysis and Critical Control Point (HACCP) Plans meet regulatory requirements.
• Execute Sanitation Standard Operating Procedures (SSOP) and Hazard Analysis and Critical Control Point (HACCP) Plans effectively to prevent unsanitary conditions and adulteration of product.
• Review records, observe plant operations and conduct hands-on verification to ensure compliance with regulatory requirements and prepare detailed documentation (Non-Compliance Records) of non-compliance with regulatory requirements.
• Determine when regulatory control action is necessary. You will assess whether the plant's corrective or preventative actions are acceptable and effective, if there are trends in noncompliance, or if an enforcement action is warranted.
• Conduct regulatory oversight activities inside plants in matters relating to other consumer protections (e.g., economic adulteration and misbranding).
• Have contact with plant managers, owners and others to explain legal and regulatory requirements, discuss operation of the plant's SSOP, HACCP plan and other food safety programs.
• Communicate and defend determinations on non-compliance issues and discuss plans for addressing non-compliance.
• Work with a variety of individuals to resolve problems, clarify differences of interpretation concerning HACCP and other food safety or consumer protection requirements.
• Advise other Agency inspectors, supervisors and officers on inspection and enforcement matters for which you are involved.
• Conduct various samplings, surveys and tests to obtain pertinent data on potential problem areas, industry trends, or other issues of current interest to the Agency.
• Be involved in performing health and safety verification sampling and tests for detection of specific microbes (e.g., salmonella, listeria, etc.), residues or contaminants.
• Assure that products approved for import are in full compliance with all applicable Federal regulations governing the importation of meat and poultry products.
• Authorize entry of all meat or poultry products considered to comply with Federal regulations or refuse entry of any products which violate any of the requirements for admission into this country.
• Coordinate with other Federal agencies (e.g., the Animal and Plant Health Inspection Service (APHIS) and U.S. Customs and Border Protection (CBP) on such matters as animal health restrictions and refused entry lots.

1. Sets up cafeteria lines, steam tables, dining room tables, and side service stands with hot and cold food items including meats, vegetables, salads, desserts, bread, butter and beverages. Sets up and distributes food and beverages to the rooms, ensuring appropriate serving utensils are used, and replenishes items when necessary. Breaks down and cleans area when meals are complete. Sets up dinning room tables for service, places food and beverages on tables, and replenishes items as necessary. Sets up and operates dishwashers, performs preventive maintenance and cleaning. Scrapes, soaks, scours and scrubs bowls, pots and pans. Also performs heavy duty cleaning tasks such as ceilings, exhaust hoods, under and behind kitchen equipment, washes floors and walls, walk-in refrigerators and freezers, sanitizes garbage cans. May unload food from delivery trucks. Collects and transfers trash from work area to disposal area.

2. Assembles and tosses fresh fruit or green salads in quantity using prepared dressings, serves into standard serving sizes. Makes cold sandwiches using prepared ingredients. Prepares milk and milk allergy substitutes.

3. Provides assistance to the Cook and Cook Supervisor regarding food preparation by peeling, chopping, grinding, paring, cutting, slicing, dicing, pureeing, dredging, flouring or breading; weighs, measures and assembles ingredients for regular and special dietary menu items. On a regular basis, prepares uncooked food items. Using correct measuring utensils and/or portion control scales, portions foods IAW USDA Food Program for distribution and meal service, and covers, dates and stores leftovers according to established procedures.

4. Ensures kitchens are adequately stocked and equipped with the necessary food and equipment. Informs supervisor if ingredients for menu items are not available to allow adequate time for items to be procured for use.

5. Prepares baby formula, in compliance with USDA food requirements for children ages 6 weeks to 11 months. Ensures correct proportions, as governed by the USDA food programs, are provided at the center(s) on a daily basis. Receives and inventory food deliveries. Ensures that all food is of top quality and freshness before receiving and/or preparation.

6. In the absence of the Cook, may perform a variety of cooking tasks with direct supervision and direction. Follows posted USDA approved menus. If changes are necessary, notifies supervisor prior to making the change. Follows standardized recipes in preparing meals for the CDC.

7. Ensures compliance with standards as set by the USDA Food Program, base Public Health, and Safety and meets all DoD standards for Food Health & Safety.

8. Incumbent is responsible for independently completing work as scheduled after initial oral or written instructions when changes or new assignments are made. Supervisor periodically checks to see that work is done on time and according to instructions.

Physical Effort: Frequently lifts or moves objects weighing up to 40 pounds. Continuous standing, walking, frequent stooping, reaching, pushing, pulling and bending. May be required to work on ladders and use powered cleaning equipment.

Working Conditions: Uncomfortably high temperature and humidity are created by steam and heat from cooking and dishwashing. Area is usually noisy and there is a danger of slipping on wet floors where food or beverage has been dropped. Exposed to hot liquids, sharp cutting blades, hot working surfaces and extreme temperature changes when entering walk-in refrigeration or freezer units.

This position is located in the Nutrition and Food Service of a Veteran Affairs Medical Center. Nutrition and Food Services is responsible for providing meals and nutritional care to Veteran patients at the Medical Center. The primary purpose of the Cook, WG-6, is to prepare nutritious, high quality meals for service to the Veterans. The position has a sequence of steps that require attention to work operations, sanitation and safety; work assignments may require knowledge and judgment. The work of this position is involved in the preparation of regular or special diet foods and meals. This includes cooking meats, poultry, fish, shellfish, and vegetables and making soups, gravies, sauces, desserts, and other foods. MAJOR DUTIES:

• Works independently to prepare and cook a variety of items including regular and therapeutic diet (diabetic, low sodium, low protein, gluten free, etc.) entrees and dessert items.
• Follows menus, production sheets and recipes to prepare items in the quantity needed.
• Cooks hot cereals, concentrated or dehydrated soups, sauces, gravies.
• Grills eggs, hamburgers, meat patties, pancakes, French toast; makes cold sandwich fillings and assembles a variety of sandwiches.

• Weighs, measures, and assembles ingredients accurately and according to standardized recipes or requisitions.
• Monitor and maintain proper spacing of food products from floor, ceiling and shelving to ensure adequate air flow and spacing of products for optimal food safety.
• Monitor for signs of pest notifying the appropriate individual as determined by your local policy.
• Maintain accurate food inventories.
• Provides assistance to supervisor or higher grade worker in ordering food in accordance with daily and weekly menu requirements.
• Maintains strict security of all areas.
• Performs other related duties

Primary responsibility is to provide supervision and instruction to 25-30 inmate workers who are assigned the duties of cooks, butchers, bakers, dining and dish workers, vegetable preparation workers, and pot and pan washers.

Provides continual training to the inmate workers in order to update their knowledge in all phases of production, presentation, and sanitation of food items. Oversees the receiving, storing, and issue of all food and non-food items.

Responsible for security operations such as key control, yeast control, knife and blade control, inmate accountability and conducts routine contraband searches throughout the work area.

Along with all other correctional institution employees, incumbent is charged with responsibility for maintaining security of the institution. The staff correctional responsibilities precede all others required by this position and are performed on a regular and recurring basis.

The Food Service Worker duties and skills needed to be successful in this position include, but are not limited to:

• Using proper cleaning solutions to sanitize food preparation surfaces.
• Cleaning walk-in refrigerators and freezers in a food service or food handling organization.
• Handling and storing sanitized dishes, glasses and silverware for public use.
• Making sandwiches using prepared ingredients for cafeteria or buffet lines.
• Portioning food items into standard serving sizes using the proper utensils and containers.
• Assembling and tossing fresh fruit or green salads in large quantities for public consumption.
• Brewing coffee in a restaurant/commercial size coffee maker.
• Setting up glasses, silverware, dishes, trays and condiments in communal dining areas.
• Scouring and scrubbing heavy cooking utensils such as mixing bowls and pots.
• Performing heavy duty cleaning tasks such as ceilings and/or exhaust hoods.
• Loading and operating a continuous conveyor belt feeding dishwasher.
• Setting up cafeteria lines and/or steam-tables with hot and cold food items.
• Standing/walking to clear tables and carrying trays of heavy dishes for several hours or more at a time.
• Sweeping and mopping floors repetitively in high traffic areas such as corridors, entry ways, cafeterias and other areas.
• Moving kitchen equipment such as stand mixers, weight scales and meat slicers to clean spaces behind and under such equipment.
• Delivering meals, which may include hot foods and liquids, to patients' bedsides or patrons.
• Emptying trashcans containing food scraps and waste.
• Reading and understanding written material such as time and duty schedules.
• Reading and following instructions with regard to safety data sheets for hazardous chemicals.
• Reading and following instructions on menus, recipes, and/or basic work instructions.
• Following label directions in using cleaning or disinfecting/sanitizing agents.
• Applying sanitation principles to safeguard food against spoilage and waste.
• Adhering to safety policies and procedures when performing manual work involving lifting, carrying, transporting and delivering food or other items.
• Working quickly without accidents while at the same time being attentive to the quality of your work.
• Recognizing typical health and safety hazards for yourself and other workers around you.
• Working rapidly and accurately under the pressure of deadlines.

What you'll do:

• Ensure all kitchen areas, utensils, crockery and equipment are clean and organised
• Assist in the checking, acceptance and correct storage of deliveries
• Properly disposing of kitchen waste and recyclables
• Supporting the Chefs with basic food preparation tasks as required
• Ability to work well within a team, supporting other members of the kitchen staff too

What you bring:

• Experience isn't essential as full training will be provided, although its a bonus to know your way around a professional kitchen
• Ability to work in a fast paced and dynamic kitchen environment
• Strong attention to cleanliness and hygiene
• Team player and a positive attitude
• Willingness to learn and take on various kitchen tasks
