JOB SCOPE
Food and Beverage Manager is responsible to ensure the efficiency running of the day to day operations of the Coffee House, kitchen and banquet functions. He is responsible to ensure that the staff are properly trained at the required service standards.
JOB RESPONSIBILITIES
1. Proper planning of the duty roster is in accordance with the operations needs and to ensure that the work is carried out satisfactorily to minimise overtime.
2. Organise the kitchen schedule to supervise and implement hygiene and quality control, correct preparation method, presentation, correct use of materials and equipments & services.
3. Implement and control both the induction and on-the-job training of staff after having produced the training program in a systematic manner.
4. Write or update the job descriptions of the staff as and when required.
5. Planning and costing of the dishes in the menus to ensure profitability.
6. Examine and if necessary adjust the stock control and requisition system so that it is efficient and orderly.
7. Ensure that all the hygiene regulations are compiled with such as no smoking in food preparation areas, no cooked meat or food next and below to uncooked food.
8. Check the various exists dustbins to eliminate food or other item leaving the hotel illegally.
JOB REQUIREMENTS
1. Possess a Degree/Diploma in Hospitality and Tourism Management.
2. Have at least three (3) years of relevant working experiences and exposure in similar capacity.
3. Good interpersonal communications abilities.
4. Strong leadership in leading a team and able to work independently.
5. Good planning and organising skills.
