The hotel was once the home of Colson's, a department store which opened in 1792 by local miller Mrs Colson. The hotel staying true to its roots now boasts 104 stylish bedrooms designed to honour elements of its historic past.

Role Responsibilities
You’ll support the Head Chef in ensuring the efficient and effective running of the Kitchen and Team. You’ll deputise for the Head Chef in their absence and keep consistency across the board. Keeping a keen eye for the finer details you’ll ensure that the preparation and presentation of the food is of a high standard, and complies with Food Safety Regulations, at all times. As a senior member of the Brigade you’ll support with supervising, training and motivating the team to achieve the standards set and work to achieve budgeted food gross profit.

• To motivate and train the Kitchen Team and keep everyone moving in the right direction.
• To aid the Head Chef in planning and implementing new menus.
• To ensure that all deliveries are checked daily whilst ensuring an appropriate stock level is maintained.
• To work closely with the Breakfast Team to insure a smooth running of the breakfast service.
• To work closely with the team to insure a balanced staff meal is served twice a day.
• Assist in the writing and recording in the rota in the absence of the Head Chef.
• To ensure that a high standard of cleanliness is maintained in the kitchen operation.
• To strive and anticipate customer needs wherever possible and to react to these to enhance customer satisfaction.
• To ensure all systems set by the Company and Head Chef are being followed.
• Devise, agree and action training plans for department in conjunction with the Head Chef to support and develop the teams’ skills and knowledge.
• Ensure the team are dressed in appropriate uniform and appropriate persona hygiene standards are met at all times.
• To undertake all budgetary controls to achieve budgeted gross profit. You’ll give consideration to stock control and rotation, purchasing, price and portion control and wastage.
• To abide by all Company and Legal Food Safety Standards.
• Report all accidents, dangerous occurrences, or hazards no matter how minor to the Supervisor, Head Chef or Duty Manager.
• Complete any other reasonable tasks as delegated by your Line Manager.

Key Requirements

• Sous Chef or exceptional Chef de Partie looking for their first Sous Chef position
• Flexibility – to enjoy working different shift patterns and seeing the operation on different days of the week including the weekends as well as mornings, or evenings.
• Be comfortable following a standardised menu
• To be standards driven and have good organisational skills.
• To be able to make decisions in a fast paced environment and to enjoy it

Experience and Qualifications
You don’t need experience to join our Food and Beverage Team. You may already be a Takeaway Assistant, Kitchen Assistant or Crew Member or maybe you have Retail or Restaurant experience but if not, that’s ok! We will provide the training and support required to ensure you are great at what you do.

Hotel Indigo Exeter, managed by Focus Hotels Management Group is actively seeking a dedicated individual to join our team in the role Reservations Assistant.

Who are we?
Hotel Indigo Exeter is a boutique 4-star hotel featuring 104 stunning bedrooms with several distinctive food and beverage outlets, Becketts Rooftop Terrace, Colson’s Restaurant with private dining space, Retreat Spa and The Dugout Bar.

Role Responsibilities
• Answering phone calls and responding to emails from customers who are interested in making reservations or have questions about their reservations.
• Providing customers with information about the hotels accommodation options, rates, and amenities.
• Processing reservations, cancellations, and modifications using the reservation software.
• Take restaurant bookings from customers in person, over the phone, or online, record them and assign tables by their requests and the suggestions of the automated system.
• Ensure all reservations that require a deposit or full payment in advance have completed the payment process accordingly, and that it is recorded as required.
• Updating and maintaining customer information in the reservation system.
• Coordinate events, both public or private in the private dining room, Becketts Rooftop Bar, Colson’s Restaurant and The Dugout.
• Create function/event sheets for private events, ensuring that all detail is correct and communicated to all departments.
• Develop client relationships along with all opportunities to generate repeat bookings and recommendations.
• Raise revenues in the hotel system as required.
• Engage in community activity to promote social and business events.
• Follow up and develop client leads to convert business as set out via your line manager.
• Complete any additional tasks that management assigns.
• Assist other departments within the hotel as required to effectively support a winning sales culture and team as required by the General Manager
• Proactively promote the internal sales lead initiative within the hotel, restaurant, spa and bars to exceed targets.

Key Requirements
• Strong organisational skills
• Existing hotel and or restaurant/bar experience essential.
• Availability to work weekends (10 am - 6 pm)
• Preferred experience with IHG systems and OpenTable, however training will be provided.
• IT system experience preferred; however, training will be provided.
