The 144-room Ibis Bridgwater – Opened in March 2021 – is managed by Cycas Hospitality and is Cycas’ first property under the Ibis name by the Accor brand. The five-storey property incorporates a ground-floor restaurant named the Keepers Kitchen & Bar, and meeting facilities.

Job Scope
The Keepers Kitchen & Bar is a new fresh concept from Accor and this opening will only be the fourth of it's kind in the UK. It's a great place to relax, unwind and indulge, morning, noon or night.
Keeper's is open all day offering British, international classics and Keeper’s favourite dishes, featuring our signature house honey.
The sous chef will help direct the operation of the kitchen including food preparation and quality, physical maintenance and inventory functions to ensure hotel quality standards and revenue goals are met. The successful candidate will also be hands-on with any due diligence required from a kitchen point of view.
Under the general supervision of the Head Chef you will oversee the general day-to-day aspects of the Food and Beverage operation. The sous chef will promote the desired work culture and ethics aligned with our company values, remaining calm and level headed whilst creating a fun and positive atmosphere within the kitchen.
The right candidate will be self-driven and thrive whilst working under pressure, consistency and time keeping as well as a willingness to learn will be key. There will be opportunity for ongoing training and support in learning the necessary tools to cover responsibilities of the Head Chef in their absence.
Key Job Responsibilities
Involved in the preparation, cooking, service and storage of the following dishes:
Appetizers, Savouries, Salads and Sandwiches
Applies organization skills for mis en place
Sauces
Produces hot and cold sauces for menu items ensuring consistency
Eggs, Vegetables, Fruit, Rice and Farinaceus Dishes
Pultry and Game dishes
Meat dishes
Meat marinades
Carve meats
Fish and shellfish
Sauces for fish and shellfish
Garnishing techniques and methods of service for fish
Petit fours
Desserts, pastry, cakes and yeast goods
Communicates to Line Manager any difficulties, guest or internal customer comment and other relevant information.
Attends and participates in daily briefings and other meetings as scheduled.
Prepares Regional Dishes appropriate to the hotel menu, location and guest mix.
Provides direction to the Kitchen staff, including Chef de Parties, Commis, Cooks, Kitchen
Attendants and Kitchen Porters.
Works alongside the Head Chef to control and analyse, on an on-going basis, in order to optimize the following:
Quality levels for product and service
Guest satisfaction
Operating costs
Sanitation and cleanliness (hygiene)
Coordinates and supervises the preparation, presentation and service of food products to ensure the highest quality at all times.
WHAT YOU SHOULD BRING
1 years previous experience of a management/supervisory Sous Chef role
Experience within a Hotel Restaurant Operations is desired, but not essential
