The Venue
The National Theatre, one of the UK\\'s leading arts venues, reaches millions of people each year through live and digital programming, creating, and sharing performances in London, across the UK and internationally. NT Food and Drink, a partnership formed between Levy UK & I (part of Compass Group), KERB Events and the National Theatre, enhances the experience of visitors to the NT. Through delivery of great hospitality across the building and with a wide range of venues from Espresso bars, cafes, theatre bars or pubs and restaurants, whether theatre-going or not, we’re able to meet the needs of our guest and add to their experience of visiting this iconic venue.
Overall Purpose of the Role
• To create “The Levy Difference” with food production and service that exceeds the guests’ expectations through effective management.
• To provide strong leadership while delivering and managing the kitchen operation, whilst controlling procedures and costs
• Ensure the smooth planning and delivery of a first-class catering product to our clients and customers, ensuring that performance standards are achieved through the use of Levy Signatures guidelines.
• To demonstrate full alignment to our Levy UK vision and values by creating and living the Levy difference through delivering Legendary Experiences and Powerful Partnerships Key Accountabilities
• Acknowledge and act upon individual customer needs whilst observing service standards, dealing with feedback positively and with appropriate follow up action when required.
• Recognize potential complaint situations and take effective steps to avoid and/or resolve these situations. Monitor guest satisfaction results within your area of responsibility.
• Share best practice across units and strive in the achievement of total customer satisfaction.
• Deliver consistently against agreed standards and KPIs, establishing and maintaining quality and presentation standards for all menu content.
• Utilize Foodbuy procurement system for ordering and receiving of products and stock control.
• Take a structured approach to the management of the food production and service and demonstrate innovation in all areas of our operation.
• Assist in achieving budgeted food cost of sale target and help manage the kitchen variable labour targets.
• Assist the Head chef in the control of all operating costs in line with set targets as advised by the General Manager
• Ensure understanding, awareness, and compliance with all of the Company’s security, stock control, loss prevention and key holder procedures.
• Responsible for managing a large and diverse team of variable hourly chefs and kitchen porters.
• Actively communicate with team members to build positive team morale and actively offer support and guidance as necessary.
• Assist the Head chef with managing the performance of the culinary team.
• Oversee the induction of any new team members.
• Work closely with the Head Chef to improve staff retention and turn over.
• Work with the onsite HSE champion to ensure that Silver and Gold HSE standards are delivered and maintained in your area of business
• Ensure any hazards are reported to the Head Chef or Health & Safety Coordinator
• Ensure that the Company Health & Safety and Food Safety Policies are adhered to at all times within their own area of control and lead a best practice health & safety culture.
• Achievement of Silver and Gold HSE standards
• Where applicable produce a unit risk assessment in relation to food production and demonstrate traceability of staff training.
• Assist Head Chef with Natasha’s Law compliance, allergen documentation and reporting for daily business.
• Actively maintain day-to-day contact with key stakeholders to establish strong working relationships across the partnership.
• Support in the production of culinary updates for Managing Director and / or client. Person Specification The ideal person should be able to demonstrate and show understanding in the majority of the below core competencies and desired skill sets:
• 2+ years’ experience of working in a multi-site venue.
• Minimum level 3 Food Hygiene Certificate.
• Knowledge of H&S compliance, COSHH, Allergen awareness, and Food Safety policies.
• Adaptability – No day at NT Food and Drink is the same, with bespoke requests and varied service.
• Team Leadership & Coaching; Realises the potential in everyone and inspires others to deliver to the best of their abilities.
• Builds relationships on integrity, respect, trust, and example. Presenting a professional approach in all duties.
