The Role
London South East Colleges is seeking to recruit a Commis Chef Apprentice to work within our BR6 restaurant at our Orpington Campus.
We are looking for a passionate and enthusiastic individual to join our team as a Commis Chef Apprentice. This is an excellent opportunity to start a career in the culinary field.
The Apprentice will support the kitchen operation for BR6, a sixty-cover restaurant as well as the connected Bakehouse and Terrace area, with direct line management of the Head Chef and senior kitchen team.
Skills and Experience:
The person appointed will be required to work flexibly within a team environment and will be allocated a range of duties and responsibilities.
Food & Health and Safety:

- Keep up to date with HACCP documents, ensuring they are filled out daily
- Ensure stations are kept clean and organised
- Keep on top of dishes in pot-wash during service
- Follow organisations cleaning procedures, reporting any faults to supervisor
- Ensure food is stored correctly – following F.I.F.O storage system
- Monitor kitchen equipment - reporting any faults to supervisor
- Ensure safe storing of equipment - knives, blades etc,
- Perform stock checks, informing supervisors of depleting stock
- Label food items for storage within organisations policy.
- Prepare (wash, cut, cook) vegetables, fruits and meats to specifications
- Assemble / cook dishes on the menu with consistent quality

The Role
We are looking to hire a dedicated and reliable kitchen assistant to assist the Catering Manager with ingredient preparation as well as perform all washing and cleaning duties required in the kitchen and service areas. The role will also include serving customers, taking orders and preparing hot drinks using a commercial coffee machine.
The key responsibilities of a kitchen assistant include undertaking food preparation tasks, as directed by the catering manager, preparing ingredients, cleaning vegetables, preparing simple dishes, observing correct cooking times and temperatures, using cooking equipment, utensils and machinery (e.g. saucepans, pans, chopping boards, meat slicers), cleaning cooking utensils, keeping work stations and surfaces clean and tidy and customer service.
To be successful as a kitchen assistant, you should exercise exceptional time management and ensure that all duties are completed in a timely manner. Ultimately, an outstanding Kitchen Assistant should be able to comply with all food and health and safety regulations.

We are looking for an experienced and creative Head Chef to join our Park Avenue Care Home in Bromley, Kent. You will become part of a compassionate and welcoming team providing physical, emotional, and social support and most importantly outstanding meal experiences for the people living in our care home. Excelcare is a family-owned care home group established for over 34 years. We provide the highest standards of care to older people with a range of needs including dementia, physical disabilities, and mental health issues. • Salary: £15 per hour
• 40 hours a week (minus unpaid breaks)
• 5 shifts per week from 7am – 3pm between Monday - Sunday. You will be required to work alternate weekends.

About the role:

• As the Care Home Head Chef, you will be required to prepare and cook nutritious meals using fresh ingredients.
• Schedule weekly meal menus, paying attention to individual dietary requirements
• Work with the Home Manager to ensure that ordering of stock is in line with budgetary requirements.
• Work with healthcare professionals involved in the support of people living in our care homes to ensure meal plans and dietary requirements fall into individuals support plans and risk assessments.
• Maintain quality assurance systems within the kitchen
• Undertake supervision of other kitchen team members
• Have a full understanding of Health & Safety as well as Food Hygiene issues, COSHH, and working within the guidelines relating to contamination and cross infection.
• You will be involved in meaningful activities with the people living in our care home as well as always promoting independence, choice, dignity, and respect

What we are looking for from you:

• Experience of cooking for large numbers
• NVQ Level 2 in catering and hospitality
• 2 years’ experience in a catering environment
• 12 months experience in managing a kitchen
• Excellent interpersonal skills as you will be involved in meaningful

About the role…

You’ll ensure all aspects of hotel maintenance and property are kept to the very best standards and in line with all relevant health and safety legislature and procedures. You’ll also keep an organised and secure maintenance office, be responsible for the efficient operation of the hotel property and all its equipment, and create and maintain the preventative maintenance plan. You’ll play a key part in organising and managing service contracts, receiving quotes for ad-hoc requirements, and be the main contact for all contractors. You'll keep up to date with the maintenance log to ensure jobs are completed efficiently so that guest satisfactions are met during their stay.

About you…

Experience of working in a maintenance department preferably within a hotel is required. You will have the ability to create a maintenance schedule, ability to troubleshoot, knowledge of structure or grounds to be maintained, knowledge of maintenance procedures, knowledge of systems to be maintained (e.g. Electrical, roofing, pool), and a trade qualification would be desirable.

• Strong communication skills through a variety of means

• Flexible and adaptable, with the ability to stay calm under pressure, adapting your approach to complete routine and non-routine tasks

• Excellent knowledge of health & safety, Fire Safety, building codes, laws and regulations and all role related statutory requirements, promoting a safety conscious working environment at all times
• Effective at cost control – Keeping things like wages and supplies within budget
• A good understanding of heating, ventilation and plumbing building services, with up-to-date knowledge of maintenance techniques. Experience of using old and new style equipment
